Baumard Savennieres Clos Du Papillon 2018

100% Chenin Blanc grown on slate soils that include soapstone. Hand-picked off 36 year old vines (the vineyard is in the shape of a butterfly, hence the name) and sorted so that only the best fruit gets a guernsey. The fruit is then whole-bunch pressed and fermented in stainless steel where it remains on fine lees for 9 months. This wine shows glorious flavours of fig, guava and pear and the bottle age has added salty, buttery toast elements to it. A very long finish that takes the beautiful acidity with it the entire journey. Pair with herbed chicken/turkey or pork chops and savoy cabbage.
