Made from Pinot Noir fruit predominantly from our Strathbogie Billiās vineyard, this wine was crushed and fermented with a Premier Cru yeast selected to enhance forest fruits, spices, aromatic herb notes. The wine was matured for six months in both stainless steal French oak and finished off with a dash of Shiraz (6%). Blending Shiraz adds complex dark fruit and savoury spice notes on the aroma and palate and contributes to the tannin structure.
