It was with the RouillÚres that all began, the cuvée of Saint-Nicolas par excellence, light, fruity and all in finesse. This wine concentrates all that our particular terroir offers, freshness, pleasure ⊠A wine that wants to be simple and pure.
The vineyard
Emblematic of the estate, Les RouillÚres is the first plot planted by Frédéric and Nathalie. It becomes the eponym of this cuvée rich in fruit and depth. Our Cabernet Franc vines are planted on a terrace where the Loire has deposited its sand and gravels. All of our grapes are harvested by hand and no insecticide is used on our vines that are about forty years old.
Vinification
Fruit of an infusion of destemmed grapes, this cuvée is aged for 8 months in vats. The yeasts are indigenous and the wine has few sulphites, 30mg/L in total.
