Winemaking: The fruit was picked early from low yielding vines and at night to preserve fruit quality. Primary fermentation using traditional EC-118 champagne yeast in stainless steel, partial malo latic fermentation gives fullness but still retains freshness. 3 months on lees, then made in the traditional charmat method. Dosage 6g/L. Dry. Clones: Chardonnay I10V1
