Fermented in stainless steel with native yeasts for 15 days before transferring to custom-made 228L barrels (crafted from oak selected and aged by Valentin himself) for 12 months' élevage. Unfined, unfiltered, with minimal sulfur (3g/hl at bottling only), respecting natural winemaking principles.
