The Bourgogne Rouge Cuvee Edme is named after Maison Champyâs founder, Edme Champy. Itâs a composition of predominantly grapes from Maison Champyâs own Bourgogne vineyards around Volnay and Ladoix alongside purchased fruit from growers in the Cote de Nuits.
All hand picked, 100% destemmed and fermented in a combination of open top tanks made from concrete or wood. All of the parcels are aged in barrel for 10 months, 10% new. The various vineyards are vinified separately then blended after the aging.
