The Listán Negro grapes come from the El Esquilón plot and are 80 years old and the Tintilla grapes are about 15 years old. The 1.2 hectare vineyard is located about 550 meters above sea level with North exposure. The soil dominated by volcanic rock does not allow for high production but the wines are very complex and have an intense flavor.
As for the production, the grapes are destemmed without crushing, followed by alcoholic fermentation with native yeasts for 14 days, with manual bazuqueo, reaching a temperature of up to 28ºC. After a 10-day post-fermentation maceration, it is devatted into French oak barrels (Allier and Nevers), where malolactic fermentation is completed in contact with its lees, for subsequent aging for a minimum of 10 months, finally bottling without filtering. . Due to the low yield of this plot, production is very limited per vintage.
