Trained as an oenologist in Bordeaux, he began consulting for others before starting his own domaine in 1999 with just one hectare. Today, he farms over 15 hectares biodynamically, focusing on low yields, native yeast fermentations, and minimal intervention in the cellar. Sylvain is deeply committed to the expressive potential of Pinot Noir and AligotĂ©, working with old vines and historic lieux-dits. His wines are precise, textural, and soulful, anchored in limestone and crafted with the humility and rigor of a true artisan.
Crafted from Pinot Noir and Pinot Beurot (Pinot Gris) vines aged between 1932 and 1949, this rosĂ© is matured for 14â18 months in 500-litre barrels. It presents aromas of summer pudding and redcurrant, with a palate that balances freshness and density. The wine's structure and complexity make it more akin to a light red, offering a serious rosĂ© experience that evolves beautifully with age.
